Amsterdam’s newest coffee shop is shaped by tactile materials and sensory design

In Amsterdam’s Oud-West neighbourhood, specialty coffee brand Uncommon has opened a new bar that extends its philosophy of craft, community and close relationships with coffee producers. The interior was conceived by Instil Collective, a multidisciplinary practice known for creating environments shaped by sensory experience and human wellbeing.

The project draws on the idea of a “living network of roots”, reflecting Uncommon’s connections with coffee growers while exploring how relationships between people, environments and materials shape the experience of a space.

As the studio explains, “this concept of connection — between inner and outer worlds, people and their environments — is what makes Instil Collective’s approach unique.”

At the centre of the café sits a substantial quartzite counter. Its veining, streaked with amber, grey-blue and warm brown, reads almost like a geological landscape. Stretching across the room as both preparation counter and gathering point, it places the rituals of coffee-making at the heart of the space.

Dark wood cladding beneath softens the visual weight of the stone, establishing a quiet dialogue between mineral and timber. The interior maintains a restrained palette of natural materials throughout.

“Every material and design element was chosen to heighten the sensory experience,” says the team. Hemp-infused plaster pillars introduce a faintly fibrous texture, while a hand-carved wooden floor traces soft, organic lines that echo patterns found in nature.

Light plays a subtle but important role. Walls finished in softly pigmented mineral plaster diffuse daylight across the room, while textured glass panels filter brightness from the street. Pendant lighting complements the natural light, creating an atmosphere that feels both intimate and open.

Stone, timber and plaster ultimately become the café’s architectural language, transforming everyday coffee rituals into a grounded sensory experience.
